In recent years, there has been a notable shift in the way grocery stores present themselves to consumers. While this shift is commendable, a paradox remains: these same stores continue to fill their shelves with unhealthy food choices. There are a lot of false claims on the front of the package that are misleading. Consumers have to have a very good knowledge level to be confident in knowing what is true and what is hype. I am hopeful that if we, as consumers, vote with our pocketbooks for the products that really are natural and healthy, we will make more progress.

The ‘elephant in the room’ question remains, however. Are these claims, food groupings, shiny new products actually good for us, or are they cleaver positioning for yet more foods that in ten years will be deemed ‘cancer-causing’ or some other detrimental to health moniker?

Here is just one example: We all remember the hype behind sucralose…which was replaced by the hype for allulose.  A lot of the wording of these sugar alternatives is focused upon whether they are disaccharides (two monosaccharides together) or monosaccharides and whether they must be labeled as sugars.

A lot of the claims come from whether the food companies must list them as carbohydrates or sugars on the nutrition labels and how the public will perceive the information. What many do not understand is that when the cane and corn sugars are ingested, our bodies combine and turn them into usable energy.  This creates a conundrum: if you are diabetic and eat a lot of baked goods made with edible grass ingredients (the flours of gluten and non-gluten grains, corn, rice, and cane sugar) your body’s systems are overloaded and create insulin problems.

We do not adequately label grains to warn people affected with diabetes that once ingested, these ingredients will cause rampant insulin fluctuation. Instead, it is common practice to prescribe medications to trick the body into behaving as if the alarming reaction is not happening. We utilize drugs to manipulate the body, often with awful side effects that unsuspecting consumers are unaware could be avoided.
