Ingredients:

Garlic & Onion Crepe Mix by Grain Free Mama’s:

1 package of Grain Free Mama’s Garlic & Onion Crepe Mix

3 eggs

1 cup water

1 6 oz. salmon filet

1/3 cup Teriyaki Glaze (from Food Breakthrough: Adjust Your Diet, Transform Your Life cookbook)

2 TBSP red onion, diced

2 TBSP red pepper, diced

2 TBSP celery, diced

2 TBSP radish, diced

2 TBSP white turnip, diced

Sprig of cilantro, for garnish

 

Instructions:

DAY BEFORE:

  1. Prepare the salmon marinade (Follow the directions for Teriyaki Salmon Filets in Food Breakthrough cookbook). Place the marinade in a sealable container or bag and place the salmon inside, making sure to spread the marinade so that the filet is covered. Seal and place in refrigerator to marinade overnight.

DAY OF:

  1. Follow the instructions on the Grain Free Mama’s Garlic & Onion Crepe Mix to prepare the batter. Heat a crepe stone or non-stick pan over medium-high heat and lightly grease with avocado or olive oil. Pour a small amount of batter into the center of the pan, swirling to spread evenly. Cook until the edges lift easily, then flip to cook the other side. Set aside.
  2. Cook the Salmon. Preheat your oven to 400°F (200°C). Place the marinated salmon fillets skin-side down on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. Alternately, you can cook the salmon in a pan over medium heat. Set aside.
  3. Wash and dice the red onion, red pepper, celery, radish, and white turnip.
  4. Break the salmon into bite sized pieces and arrange in a triangle on the crepe at the edge (place on about 1/6th area of the crepe).
  5. Top with the diced vegetables.
  6. Fold top over and then fold the sides to overlap on the top, using a toothpick to hold them if necessary.
  7. Plate and enjoy!
