Peach Cobbler Dessert Pizza

Dessert pizza anyone? Make it sugar free too? A double bonus. Welcome to my taste-filled world…

The other day we decided to have some pizza, and so we made a great tasting turkey pepperoni, sausage and veggie pizza. After we got done devouring it we discovered that we still had room for dessert. So, what to make? Dessert pizza sounded great! Yummm….

We decided on peach cobbler-like dessert pizza! Yes! Looks good, doesn’t it? As good as it looks, I can assure you that it tasted even better! I started by mixing up a Grain Free Mama’s pizza crust mix and adding 2 teaspoons of Allspice to the mix. When I rolled out the crust in the pan, I made sure to have a little extra dough around the edges that I built up which gave an edge to hold the peach mixture in later. The smell of the pizza crust was making my mouth water when we baked the crust for 10 minutes before adding the peaches and sauce.

While that was cooking, I washed and cut up 4 ripe fresh peaches (removing the skin). Then I got to work creating a sauce. I knew I wanted to stay gluten free, so I used a little gelatin (1 teaspoon) for a bit of a thickening agent. Combining that with 1/3 cup of butter or plant-based alternative, I then added a little coconut milk (about 1/8 cup), 1 tablespoon of cinnamon and 3 stevia packets. I heated and simmered the mixture to thicken it up a bit and mixed the ingredients.

After this, I made a cobbler-type topping. Mixing up 1/4 cup coconut flour and 1/4 cup plantain flour, I then cut 1/4 cup of butter or plant-based alternative into this mixture until the resulting mix was crumbly and looked very cobbler-like. Now I was starting to really anticipate how good this was going to taste!

Removing the crust from the oven (I baked the bare crust at 400 degrees for 8 minutes), I began to add the toppings. First, I spread the cut up peaches evenly. Second, I poured the sauce carefully over the peaches and used spoon to even it out. Thirdly, I spooned the cobbler topping mixture over the top.

Once that was all done to my satisfaction, I returned the pizza to the oven and baked it for an additional 15 minutes. We were all really ready to try it out by now because the smells coming out of my oven were making ALL of our mouths water! Hahaha…you have to love it when your family can’t wait to dig in to your creations!

It was so good that we didn’t even wait long enough to make some whipped cream for the top. We simply couldn’t wait any longer…and we were NOT disappointed at all! It was really, really good. Wow! Not only was it fun to make, and easy to prepare, but it tasted great. The left-overs we put in the refrigerator (only 3 pieces) and enjoyed them WITH the whipped cream the next day. It was still just as good the next day.
